Does the remote connection data routed through jetbrains server or directly from my local computer to my remote server?

Yes, the remote features work via JetBrains server. There are plans to implement it via self-hosted custom server. Please vote for these requests:

FL-10399 On-premises / Self-hosted Remote Workspaces

FL-12990 Add a way to authorize users on standalone workspace server when connecting via relay
